First up was Baked Kale Chips. Sounds gross, and honestly looks kind of gross too, but the reviews were amazing, and most said they tasted like potato chips. Today's adventure in cooking was Spaghetti Squash. Now, I do already like most squashes, but I had never tried Spaghetti Squash - probably because it seemed complicated. This recipe has a real Mediterranean flare to it, and again the reviews were mostly great, so I thought I'd give it a try. You can check out the recipe here: Spaghetti Squash
I did have to adapt that recipe some - I had to cook the squash for close to an hour for it to be tender. When I tried to remove the strands they came out in little pieces instead of long strands, but the flavor was still good. Also, I used olive oil instead of veggie oil to saute the onions. Finally, I just bought an 8 oz container of Feta, and dumped in the whole thing instead of measuring out 3/4 of a cup.
Overall I liked both recipes. The Kale Chips definitely left a bit of an after taste and stunk up my house, but weren't bad and really did taste like potato chips. I wouldn't want to eat a ton of them in one sitting, but it was a nice crunchy snack treat. I really liked the Spaghetti Squash - definitely something I'll make again, and I'll enjoy having the leftovers in the meantime.
All in all, I'd say it's been a successful week of trying new recipes and enjoying yummy fresh, organic veggies!
