The Return of Foodie Friday

I know you've all been waiting on pins and needles for me to post again!  Well not to disappoint, Foodie Friday is back!

The recipe I'm posting today is a relatively new one for our house.  I actually read it on Suz's Blog - she's a mom of quads, and periodically gets to review new products from different companies.  Pretty cool if you ask me - especially when you get to keep the things you review (pasta sauce may not be that cool to review, but a high tech washer and dryer sure are)!

Anways, if you (or your kids) like pizza, I can pretty much guarantee you are going to like this recipe.  The best part is that it only takes about 20-30 minutes to make, and there is almost no prep work required!

So without further adieu...

Pasta Margherita (if you are trying to impress your spouse) or Pizza Pasta (if you are trying to impress your kids)

Ingredients:

1 package of Pepperoni minis (or regular pepperoni cut into quarters)
1 package of penne pasta
1 jar of Ragu Old World Style Margherita sauce
2 cups of shredded mozzarella cheese

See...only 4 ingredients - I told you it was easy!

Cook pasta according to directions on package and drain.

While pasta is cooking, mix entire jar of sauce with entire package of pepperonis in a large saucepan.  Heat on medium to low (whatever setting you want to use to avoid tomato sauce splatter).

Once warm, mix pasta into sauce.  Continue simmering over low or medium heat.

Mix in about 1 cup of mozzarella.  Allow to melt.

Serve immediately, and garnish with more mozzarella.

There you have it - super easy, super yummy Pasta Margherita (or Pizza Pasta).
